Chef notes
This is a cozy fall riff on a French 75, with juicy pear, warm baking spices and plenty of bubbles. The lemon keeps it bright, while cinnamon, clove and vanilla make it feel festive without being too sweet. Any leftover syrup is lovely in mocktails, warm apple cider or drizzled over ice cream.
Special Kitchen Equipment Required: A coupe glass.
Technique Tip: Shake the gin, syrup and lemon first. Then open the shaker, add the prosecco gently and strain into the glass. Never shake after adding bubbles.
Swap Option: Vodka can be used in place of gin. You’ll lose some of the botanical notes, but the spiced pear will shine through even more.
