Chef notes
From the moment One Flew South opened its doors in the Atlanta International Airport in 2009, it redefined what airport dining could be. We earned James Beard Foundation recognition (that's like the Oscars of the food world) and accolades as one of the best airport restaurants in the world. This cocktail caught on there, where departures, arrivals and layovers transformed into unforgettable food and drink experiences.
Behind the bar, I found inspiration in the guests and the ingredients on the menu, playing with the concept of time and escape. Until then, no one had seen a craft cocktail in an airport bar. Arrival Thyme changed that. It gave people a safe haven, an escape and that serene feeling of having arrived at their destination.
More than just a bitter element, Campari brings a complex balance of bitter orange and aromatic herbs along with a vibrant red color that contrasts with the tequila while enhancing the lime and thyme. Fresh thyme sprigs complement Campari's herbal elements, along with earthy, minty and peppery notes. Shaking fresh thyme in a cocktail releases the herb's essential oils, integrating the aromatics into the drink. A fresh thyme garnish amplifies the effect.
Special equipment: A jigger, shaker, strainer and rocks glass.
