Chef notes
If vodka sauce had an Indian cousin, this butter masala sauce would be her — bolder, saucier and impossible to forget. Inspired by the classic makhani gravies of North India, it’s rich with tomato, cream and a gentle hit of chili and rounded out with plenty of butter. A pinch of kasuri methi (dried fenugreek leaves) gives the sauce its signature aroma — don’t leave it out. Toss it with pasta for a comforting, weeknight-friendly meal that still feels special. You can bulk it up with grilled shrimp or chicken, or keep it simple and vegetarian friendly with cubes of seared tofu.
